Need a nutritious vegetarian soup this winter? Bring a little Waheguru into your life (and yummy kale!) with this delicious soup!
WAHE GURU KALE SOUP-

I use this much ingredient and it makes about 2 big bowls (one meal for 2 or appetizer for 4)
(Use your eye and intuition to make a smaller/bigger pot, play with spices and add-ups)
What you will need: (I choose to use all organic ingredients)
Ghee 2 tsp
Garlic 2-3 cloves
Onion ½ of a medium size red onion
Carrot 1 big (or 2 smaller ones)
Potatoes 2 medium/big red potatoes
Kale a few fresh leaves including the stems
Sea salt coarse (from France, if available) 2 tsp (or to your taste)
Water 1500 ml (the idea is to cover the ingredients in the pot, you can always add more water if needed during the cooking)
(Optional):
Cumin (a few pinches of cumin seeds)
Miso (dilute the miso separately in a cup with warm water, to add to your plate at serving time)
Tofu (just dice and toss in at the end of cooking)
Preparation:
Dice all your veggies in nice little squares, kale stems in small pieces
Chop the garlic, mince the onion
Keeping an eye on it, put the ghee in pan to melt on medium/low heat, (careful ghee heats up quickly and at high temperature: throw a piece of garlic in to see if it sizzles)
Add garlic, onion, (cumin) to sautee, shortly add carrot and kale “stemmy” parts. Stir.
When everything looks good and smells nice, add the water, stir in: you have a bouillon style base soup very tasty here, add potatoes.
Simmer/boil gently until carrots and potatoes feel soft (I check them with a spoon/knife)
Then add the salt, stir in, Stop the heat. Serve.
If you’d like to have it as a whole meal, you can make the soup more nutritious by adding some quinoa (cooked separately) in your bowl and/or 2tsp miso per big bowl (don’t put the miso in the pan: it musn’t be cooked or looses all its nutritious value), and/or a bit of unsweetened rice milk…
Et voila! Enjoy!!!!
