A soup to warm you up, make you strong and energized!
Makes about 2 big bowls (one meal for 2 or appetizer for 4). Use your eye and intuition to make a smaller/bigger pot, play with spices and add-ups!
Ingredients: (Organic if possible!)
Ghee 2 tsp
Garlic 2-3 cloves
Onion ½ of a medium size red onion
Ginger 2 tbs or to your taste
Cumin a few pinches of seeds
Turmeric 1 tbs.
Carrot 1 big (or 2 small)
Sweet Potatoes 2 medium/big potatoes
Red lentils ¾ cup or 1 cup, rinsed
Sea salt coarse (from France, if available), 2 tsp (or to your taste)
Water 1500 ml (the idea is to cover the ingredients in the pot, you can always add more water if needed during the cooking)
Preparation:
Dice all your veggies in nice little squares, rinse lentils.
Chop the garlic and ginger, mince the onion.
Keeping an eye on it, put the ghee in pan to melt on medium/low heat, (be careful, as ghee heats up quickly and at high temperature: throw a piece of garlic in to see if it sizzles)
Add garlic, onion, ginger and spices to sautee, shortly after add carrots. Stir for a few minutes.
When everything looks good and smells nice, add the water, stir in: you have a bouillon style base soup. Add diced sweet potatoes and red lentils. Stir in.
Simmer/boil gently for 20 minutes (or until all ingredients taste cooked).
Then add the salt (add the salt at the end to keep nutrients alive in crystals), stir in, stop the heat. Blend the whole thing with your Cuisinart magic wand or use a blender. Serve the creamy orange color yummy and spicy soup!
