Fall Rice and Mung Dal Khichadi

(Inspired by a recipe from Leslie Tierra, for Fall detox)
Ingredients
- ½  cup split yellow mung beans
- ½ cup white basmati rice
- 1  tsp  fresh ginger root (less if ground in mortar and pestle
- ½  tsp black mustard seeds
- ¾  tsp  cumin powder
- ½  tsp  turmeric powder
- ¼  tsp coriander powder
- ¼  tsp  fennel seeds
- ¼  tsp  fenugreek seeds
- 1 Â pinch of asafoetida
- 2Â cloves
- 1Â bay leaf
- 3 cups water (approximately)
- ¾  tsp salt (rock or sea salt is best)
- small handful fresh chopped cilantro leaves
Preparation
Take a long deep breathe and smile Â
Rinse the split yellow mung beans (dal), carefully removing any stones. Set aside.
Rinse the rice until water runs clear.
Heat a large pot on medium heat. Add the seeds first-- fenugreek, fennel, clove and mustard seeds.Dry roast for few minutes, stirring to roast evenly.
Add the fresh ginger root followed by the remaining powdered spices-- the cumin, coriander, and finally the turmeric.
The key to this dal is the dry-roasting of the spices which enhances the flavor of this simple mung dal and rice khichadi.
Add rice and dal. Stir thoroughly.
Add water and bay leaf and finally your pinch of asafoetida. Stir again and bring to a boil.
Boil for 10 minutes.
Turn heat to low, cover pot and simmer until dal and rice become soft (about 40 minutes). Check occasionally and feel free to add more water if you prefer a thinner consistency.
Cilantro leaves can be added just before serving. Wash them well, finely chop (including the stems) and sprinkle generously over your khichadi.
Add sea salt to taste.
Add a small dollop of warm ghee for a golden, buttery finish.
Serves 4 - 5
