So wonderful to connect with you, Chef Shivanter!
We’d love to help bring 2015 Sat Nam Fest West attendees into the kitchen, so to speak, and give them something ahead of time that will get their mouths watering!
Until we get to taste the deliciousness that are your vibrant creations, please share with us some tidbits of what’s in store for our taste buds and body systems during the festival!
The inspiration for the menu comes from several different sources, the fact that we are a Kundalini Yoga event brings in the vegetarian factor for sure. I believe in the diet and also know the health benefits from eating a plant based diet. I want the participants to be at the highest frequency they can be at for the yoga, the chanting, and of course the meditation. Good clean, organic, plant based foods support that vibration.
How would you describe the food and dining experience to a Sat Nam Fest First Timer?
The dining room is high energy; everyone comes together to celebrate life, we are here, stepping into community. The vibe is high, and also lots of fun; we always try to keep the flow flowing, but sometimes we just have to surrender and let it be what it must. That is the true essence of the room.
What is your favorite spice or herb, and why? Do tell!
Turmeric is the herb of choice on so many levels; it’s an awesome flavor, it has incredible healing properties, it’s been used in ayurvedics since the beginning, and it’s also a great anti-inflammatory that helps to support fluidness in your yoga practice. I could go on and on about turmeric, we will be using it in our food at the festival.
Will there be any sweet treats to look forward to, beyond the nectar of the naad?
We have become known for the yummy brownies that we serve, along with the gluten free cookies, not to be missed!!!
What are some of the most important elements that support a happy, healthy, holy yogi diet?
The vegetarian diet, very little sugar, and the commitment to buying as many organics as we can.
Which menu item do you find most Sat Nam Fest’ers being surprised they like so much?
The scrambled tofu with oven roasted potatoes tossed in coconut oil.
Will there be any big Sat Nam Fest menu hits coming back to Joshua Tree this April?
Those brownies and gluten free cookies!
OK Juice Captain, what’s your most favorite personal go-to blend for ultimate bliss?
Leafy greens, green apple, parsley, ginger, lemon.
What can you share with our new-to-juicing friends who are shy to try the Juice Program?
This is a great way to step into using juices as a support piece for bringing fast, cleansing energy into your system.
If there was only one vegetable left on the planet, which one would you choose it to be, and why?
Kale. It’s high in protein, offers incredible amounts of chlorophyll, which supports eliminating heavy metal toxins from the body.

Shivanter Singh (aka John Barczak) is a 3HO certified Kundalini Yoga teacher, a certified Interdisciplinary yoga teacher, and Integrative Nutrition health counselor. Specializing in health and wellness, he holds degrees in transpersonal psychology, education and restaurant management. With over 3 decades of experience, Shivanter is an energetic advocate for thriving health and abundant living.
As a certified health counselor, Shivanter offers cleanses, classes and one-on-one counseling for healthy lifestyle strategies. His approach is holistic in that it nourishes, supports and enhances people mentally, emotionally and spiritually. His healthy lifestyle cleanses are based on years of research and mindful experimentation. Influenced by the teachings of Yogi Bhajan, a daily Kundalini Yoga and meditation practice, healthy cooking techniques, food sciences information (like the understanding of acid/alkaline diet) and Ayurvedic herbal therapy has made is program one of a kind brilliant.
A food industry professional for more than 30 years, Shivanter is the former general manager of Omega FoodWorks at the Omega Institute in Rhinebak, NY. He is the director of The Village, a nonprofit also in Nosara, which focuses on creating and supporting community-based enrichment programs for local families and children.
